This conveyor-belt sushi restaurant is run by a fishmonger from Osaka who is particular about seasonality and freshness. They are extremely particular about their bluefin tuna, and among them, the Kyoto tuna, which is only available during the peak season from October to January, is an original brand of Oki Suisan, and is the restaurant's signature dish, made from wild tuna caught in the Sea of Japan and farmed for a short period in Ine Bay, Kyoto.
